Some weeks I want dinners that feel fresh and a little lighter after winter — but still easy enough that nobody in my house complains about them. Early spring tends to be that in-between season where schedules start picking up again, but the weather still calls for some cozy meals.

I enjoy cooking and I genuinely like finding recipes, but even when you enjoy it, dinner planning still takes mental energy. That’s one of the reasons I created the 6-Week Dinner Rotation inside the Spring Home Blueprint — so dinner doesn’t have to be reinvented every single week.

This week’s meals come directly from Week 1 of that spring rotation, which we repeat twice throughout the season to cover twelve weeks of dinners.


This Week’s Dinner Plan

This is our actual dinner plan for the week. Sometimes it’s not fancy, sometimes we eat out, and sometimes dinner gets made up on the fly — but for better or worse, this is what we’re really eating. You’re welcome to take any ideas that help minimize the dreaded “what’s for dinner?” question and leave the rest.


Monday

Jalapeño Popper Grilled Cheese

This is a fun twist on a classic grilled cheese and one of those meals that feels a little indulgent without requiring much effort. It’s perfect for a Monday when everyone is easing back into the week.


Tuesday

Chicken, Broccoli, and Rice Casserole

This is one of those dinners that feels surprisingly fun for a weeknight. It’s quick, customizable, and a good way to break up heavier meals earlier in the week.


Thursday

Slow cooker meals are always welcome on Fridays. This one is mostly hands-off and makes the house smell amazing while it cooks.

Planning note: This is a great meal to start earlier in the day so dinner basically handles itself.

Eat Out

Most weeks we intentionally leave one night open for going out or grabbing something easy. It keeps the plan realistic and gives everyone something to look forward to.


Sunday

Leftovers

Leftover nights are one of the simplest ways to reduce both cooking time and food waste. It’s also a nice break before starting a new week of dinners.


About These Weekly Menu Plans

I share these weekly menu plans because dinner decision fatigue is real. Menu planning takes time, and I completely understand why so many people hate doing it. I happen to love cooking and finding recipes — so instead of keeping my weekly plans to myself, I pass them along. If you’re looking for something new to try, you’re welcome to borrow my ideas.
