🍞 Something to Bake

And because a cozy afternoon deserves something in the oven, too β€” this is the very first thing I bake every fall, and the last thing I bake when spring starts creeping in:

Cori’s Family Famous Pumpkin Bread (not to be confused with “world famous”, but still pretty good)

Ingredients

  • 3 cups all-purpose flour
  • 1 Tbsp + 2 tsp pumpkin pie spice
  • 2 tsp baking soda
  • 1Β½ tsp salt
  • 3 cups granulated sugar
  • 1 can (15 oz) 100% pure pumpkin
  • 4 eggs
  • ΒΎ cup vegetable oil
  • Β½ cup orange juice

Instructions

  1. Preheat oven to 350Β°F. Grease and flour five 5Γ—3-inch mini loaf pans.
  2. In a large bowl, combine flour, pumpkin pie spice, baking soda, and salt.
  3. In another large bowl, combine sugar, pumpkin, eggs, oil, and orange juice. Beat until just blended.
  4. Add the pumpkin mixture to the flour mixture and stir gently until just moistened. (If using a mixer, fold the batter by hand at the end β€” the oil has a sneaky way of pooling at the bottom.)
  5. Spoon batter into the prepared pans.
  6. Bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in pans on wire racks for 10 minutes, then remove loaves and cool completely.
