Some weeks I want dinners that feel fresh and a little lighter after winter — but still easy enough that nobody in my house complains about them. Early spring tends to be that in-between season where schedules start picking up again, but the weather still calls for some cozy meals.
I enjoy cooking and I genuinely like finding recipes, but even when you enjoy it, dinner planning still takes mental energy. That’s one of the reasons I created the 6-Week Dinner Rotation inside the Spring Home Blueprint — so dinner doesn’t have to be reinvented every single week.
This week’s meals come directly from Week 1 of that spring rotation, which we repeat twice throughout the season to cover twelve weeks of dinners.
This Week’s Dinner Plan
This is our actual dinner plan for the week. Sometimes it’s not fancy, sometimes we eat out, and sometimes dinner gets made up on the fly — but for better or worse, this is what we’re really eating. You’re welcome to take any ideas that help minimize the dreaded “what’s for dinner?” question and leave the rest.
Monday
Jalapeño Popper Grilled Cheese
Recipe: https://iamhomesteader.com/jalapeno-popper-grilled-cheese/

This is a fun twist on a classic grilled cheese and one of those meals that feels a little indulgent without requiring much effort. It’s perfect for a Monday when everyone is easing back into the week.
Tuesday
Chicken, Broccoli, and Rice Casserole
Recipe: https://www.dinnerin321.com/cheddar-broccoli-chicken-and-rice/

A reliable comfort meal that’s hearty but still simple. Casseroles like this are great for nights when everyone is hungry and you want something filling without juggling a bunch of different side dishes.
Wednesday
Fish Stick Tacos
Recipe: https://www.foodnetwork.com/recipes/ree-drummond/fish-stick-tacos-8628828
This is one of those dinners that feels surprisingly fun for a weeknight. It’s quick, customizable, and a good way to break up heavier meals earlier in the week.
Thursday
Chicken in Dill Caper Sauce
Recipe: https://www.allrecipes.com/recipe/268099/chicken-breasts-in-dill-caper-cream-sauce/
This meal brings a little brightness to the week with the dill and capers. It feels slightly more “spring-like” while still being straightforward enough for a regular weeknight dinner.
Friday
Crock Pot French Dip Sandwiches
Recipe: https://easyfamilyrecipes.com/crockpot-french-dip-sandwiches/
Slow cooker meals are always welcome on Fridays. This one is mostly hands-off and makes the house smell amazing while it cooks.
Planning note: This is a great meal to start earlier in the day so dinner basically handles itself.
Saturday
Eat Out
Most weeks we intentionally leave one night open for going out or grabbing something easy. It keeps the plan realistic and gives everyone something to look forward to.
Sunday
Leftovers
Leftover nights are one of the simplest ways to reduce both cooking time and food waste. It’s also a nice break before starting a new week of dinners.
About These Weekly Menu Plans
I share these weekly menu plans because dinner decision fatigue is real. Menu planning takes time, and I completely understand why so many people hate doing it. I happen to love cooking and finding recipes — so instead of keeping my weekly plans to myself, I pass them along. If you’re looking for something new to try, you’re welcome to borrow my ideas.
Most weeks, that looks like curating from recipes I already love and cook from regularly. I really love recipes — old cookbooks, new cookbooks, and the ones saved all over the internet. Sometimes I’ll share an original recipe here, but most of the time I’m pulling together meals from recipe creators I trust, always linking back and giving credit where it’s due.
A Quick Note About This Week’s Plan
This meal plan is pulled directly from Week 1 of the 6-Week Dinner Rotation inside the Spring Home Blueprint.
The idea behind that system is simple: instead of planning dinners from scratch every week, you rotate six weekly menus twice throughout the season. It dramatically reduces the mental energy spent figuring out dinner while still keeping enough variety that meals don’t feel repetitive.
